Eco-Friendly Cod and Potato Harmony Recipe


1 lb cod fillets

1 tsp Salt

1 tsp Black Pepper

1 tsp Garlic Powder

2 tsp Thyme

1/2 tsp Cayenne Pepper, to taste

1 medium onion, julienned

2 garlic cloves, minced

Olive oil and salt-free butter (for sautéing)

1 lb petite gold potatoes, whole

3 cups water

1 tsp mustard

1 cup green peas

1 lemon


Prepare the Cod:

Season the cod fillets with salt, black pepper, garlic powder, thyme, and a dash of cayenne pepper.

Sauté Onions and Garlic:

In the same pan, sauté finely chopped onions and minced garlic just before the onions become translucent and garlic has a bit of browning olive oil. Stir.

Add cod salt-free butter to pan-sear on medium-medium high heat, for approximately 5 minutes on each side to brown. Set aside. Squirt with lemon.

Introduce Potatoes:

Add whole petite gold potatoes to the pan, stirring to coat them in the flavors of onions and garlic.

Initial Water and Mustard Mix:

Pour in 1 cup of water, stir, and let it simmer covered for 5 minutes on medium heat.

Add 1 teaspoon of mustard, mixing it well with the potatoes.

Cooking Potatoes:

Add 2 more cups of water and let the potatoes cook for 10 more minutes, allowing them to absorb the flavors. Keep covered.

Incorporate Green Peas:

Introduce green peas to the pan, stirring gently. Cook for an additional 5 minutes.

Combine Seared Cod:

Gently place the seared cod fillets on top of the potato and pea mixture.

Simmering Together:

Cover the pan and let the ingredients simmer together for another 10 minutes on low heat, allowing the flavors to meld.

Final Mixing:

Turn off the heat and gently mix the cod into the broth, ensuring it absorbs the surrounding flavors.

Rest and Serve:

Tightly cover the pan and let it rest for 5 minutes before serving.

Ready to Serve:

Your eco-friendly Cod and Potato Harmony is now ready to be served. Plate the cod on a bed of potatoes and peas, spoon split the potatoes, spooning some of the flavorful broth over the top. Garnish with another squirt of lemon and a sprig of rosemary or follow along for a twist using Brussels sprouts!

1/2 tsp coarse salt

Pinch of black pepper

1 large garlic clove, thinly sliced

1/2 red onion, julienned

2 slices of prosciutto, shredded

Olive oil and butter for marinating and roasting
